However, spinach tends to wither quickly if not properly stored, especially in Vilnius, Kaunas or rural homesteads in Dzūkija or Samogitia. My dad says that proper storage is the key to their freshness.
How does my babuytė keep spinach fresh?
- Rinse and dry: She starts by rinsing spinach well with cool water and drying it with a paper towel or salad dryer – this helps to prevent moisture accumulation, which is a common problem in Lithuanian homes.
- Wrap in a paper towel: Then wrap the spinach in a lightly damp paper towel, place it in a plastic bag or sealable container and store it in the vegetable compartment of the refrigerator. This trick works even in the farmers’ homes of Suvalkija or the Curonian Spit, where the humidity can be high.
