Hey everyone! Today I’m sharing a super simple and healthy lunch recipe that’s ready in just 30 minutes. It’s packed with flavor and nutrients – roasted broccoli, mushrooms, and lean beef cutlets. Perfect for a busy weekday or a light weekend meal!
Ingredients:
- 1 head of broccoli, cut into florets
- 1 cup of mushrooms, sliced (I used cremini, but any kind works!)
- 4 lean beef cutlets (or ground beef/chicken)
- 2 tablespoons olive oil
- Salt, pepper, garlic powder (optional) to taste
Instructions:
- Preheat & Prep: Preheat your oven to 400°F (200°C). Toss the broccoli and mushrooms with olive oil, salt, pepper, and any other seasonings you like.
- Roast: Spread the veggies on a baking sheet and roast for 15-20 minutes, or until tender and slightly browned.
- Cook Cutlets: While the veggies roast, cook your beef cutlets in a skillet over medium heat. Season with salt, pepper, and maybe a little garlic powder. Cook for about 5 minutes per side, or until cooked through.
- Combine & Enjoy: Once everything’s done, serve the cutlets with the roasted broccoli and mushrooms. That’s it!
